Back in the late 70's my parents lived in Houston Texas where my dad was a construction worker and my mom was a SAHM. They struggled to make ends meet, and my mom would come up with inexpensive meals to feed our family of 4 at the time (this is before I was born).
Over the last 33 years, these recipes have become family favorites that all of us kids know as comfort foods. Fast forward to 2016, my Dad now owns a successful thriving construction company, and my Mom still loves to cook and come up with original recipes that I look forward to sharing in the future.
Here is what you will need:
Preheat oven to 350 degrees. Place chicken in a 9x13 oven safe baking dish. This recipe works best with bone in skin on chicken, but can be made with boneless skinless as well.
Combine ketchup, water, soy sauce, brown sugar and ground ginger in a medium bowl, mixing well.
Pour sauce over chicken, and spread evenly using a spatula.
Cover with foil and bake for an hour to an hour and a half (depends on total pounds of chicken you are making). Remove foil the last 20 minutes of baking.
This meal is best served with rice. Plate your chicken and pour extra sauce over rice.
There you have a simple, delicious budget friendly family meal. We like to serve this along side some canned corn, or French bread as well.
You can very easily adapt this into a freezer or crock pot meal. It takes no time at all to prepare, and on days when we know we will be home late or need a quick dinner, I will throw this all in the crock pot on low for 6-8 hours, and have a delicious meal ready when I get home.
